Aloha Turkey Salad Recipe

Ingredients:

1 cup Water Maid® Medium Grain Rice 

3 cups cooked turkey, coarsely chopped

1 can (8 oz.) pineapple chunks in juice, drained, juice reserved

1 can (8 oz.) sliced water chestnuts, drained

1 apple, cored and chopped

1/3 cup macadamia nuts, chopped, optional

1 cup vanilla yogurt

Lettuce leaves

1/4 cup shredded coconut, toasted

Directions:

1. Prepare rice according to package directions.
2. Combine rice, turkey, pineapple, water chestnuts, apple, and nuts. Combine yogurt and pineapple juice. Toss with rice mixture.
3. Serve on lettuce leaves and garnish with toasted coconut. Enjoy your delicious food!
